Phone number visible with Sandboxed Google Play?

Hello everyone,
My question is regarding Sandboxed Google Play. I am currently with iOS. My real phone number used to be tied to a Google account that I deleted a while back. If I set up a Google account with a fake name and burner number for the activation, and then transfer my real number over to a Pixel with Graphene, can Google "see" my phone number?
Obviously if it could, it would be linked to my real name/identity.
I've searched for this answer and looked at Graphene's write up of non-hardware identifiers, but I've been unable to find the answer.

i created a gmail account with a proton email and with an active vpn. i did not register any numbers.

Thanks for replying Aviators, but my question, to be more specific, is if Google can actually see my phone number that is tied to my sim card.

Only apps you grant Phone permission get access to see the phone number of your SIM. Many app that request this permission will work without granting it.

On GrapheneOS the Google Play apps are not privileged. They have the same abilities as other apps and are restricted by the same permission model

Ah, so it's Phone permission. I suppose I was thinking the Google services themselves, not the individual apps. Thanks for clearing that up Carlos-Anso.
