UUhh, MacOS is the same privacy nightmare as Google, FB, MS and Amazon.
I installed FreeBSD on old MB Pro (M1)
Since MacOS is a UNIX OS (descended from FreeBSD), user and file rights correspond to the File System Hierarchy Standard (FHS). Similar to GOS, there is HardenedBSD a security-enhanced fork of FreeBSD.
I can't comment on the hardware security of Apple chips. I'll build my next workstation from open hardware such as Raptor Computing Systems' Talos II
