Use iPhone without Apple ID

Is it possible to setup iPhone without apple id and off loading apps without Apple’s App Store? If so, which Store/method is recommended?
And after that if I use privacy friendly apps, then what are the cons of using that iPhone instead of GrapheneOS? (Considering privacy/tracking etc,)
Any app recommendations to block Apple trackings?

I don't think it would be practical to use an iphone without an apple id unless you just use the stock apps due to how hard it is to sideload apps but, there is a way, you can use altstore but you are limited to 3 apps at once and you have to refresh them every 7 days unless you pay apple $100 per year or buy a shared account. Also apps are hard to find (you must have a jailbroken device and dump them or download them from a dump website/bot) and some don't work when sideloades due to not having the right permissions/entitlements depending on which method you used.

Not really until they add support for sideloading.

It doesn't matter how strong of a mansion you build (your privacy-friendly apps, etc.) if your foundations are crap (iOS).

You can't block Apple from tracking you, but you could use DNS filtering to try and block some of it, I guess.

You will never have a trustable operating system, no matter what you do. For me one of the most important parts: GOS provides me a trustable base and I can decide for myself, where I install stuff that puts holes into my safe device.
Some say stock iOS is better than stock Android in terms of privacy but I doubt that it is not still catastrophic.
Always use a DNS filter, Pihole or similar.

GrapheneOS is only supported on Pixel phones and Iphone is not a Pixel. I think the poster got a bit lost in the wrong forum. I do get it that he sort of intends to ask the more knowledgeable part of population, but this thread just doesn't belong here.
